Grilled peaches with mozzarella Di Bufala


Ingredients

2 or 3 peaches, firm but ripe, sliced

60 ml (¼ cup) Stefano extra virgin olive oil, divided

Salt and freshly ground black pepper, to taste

1 ball mozzarella di bufala, hand torn

Handful of fresh mint leaves

2 small fresh chilis, finely chopped

Preparation

Preheat the grill to medium-high heat.

In a bowl, add the peaches, 2 tbsp of the olive oil, salt, and black pepper to taste. Toss to coat.

Place the peaches on the grill and cook for 3 to 4 minutes per side, until nicely charred and slightly softened.

Arrange the peaches on a platter. Place the mozzarella pieces over the fruit. Garnish with the mint, chilies, and remaining 30 ml (2 tbsp) olive oil. Season with salt and black pepper to taste.
